The tasting menu is a living archive of the Valencian coast — local prawns, ricefields, sea salt and almonds reimagined through a research kitchen that has shaped modern Spanish cuisine for two decades.

Reservations open three months in advance and the season runs roughly February to November. Pairings, sommelier-led wine flights and a private chef's table are available on request.
